Could I use these to make a coop?

dont pass that offer up!! better jump on it and get that as soon as possible!! you can make a really nice coop, or even a nice brooder with that material!! Good Deal!

Mites! Wood mites might be a terrible backlash to using old wood. Can you treat the wood with poultry/garden dust first? And ask around for other best methods of preventing mites transmission from the naturally craggy old wood onto your birds.

We had a very cute wooden coop with darling baskets for nestboxes, but the mites nearly killed our silkie hen. It surprised us because we didn't know that could happen. Now we know to treat wood, even though wood is good looking, and old wood and old baskets sure do look charming.
 
I personally wouldn't use the older wood pallets (i agree with what 6chickens in St. Charles said) but would definitely use the new wood pallets. We have built sooooo many coops and a peacock aviary with FREE pallets. If the pallets are not rotting out and in good condition, then I would surely get them. It's a great way to recycle and save money.
