Counting 21 days?

Sorry this seems like a stupid question, but how do people calculate the 21 day gestation? I put some eggs in at 11am on the 23rd August. So would I put them into lockdown on day 18 - 11am 11th September? And they would be due 14th September day?

Example:

If you put them in on a monday, they are due on a monday 3 weeks later.
