I wish I could tell you. LOL I only catch what my mom does with the meat when I get hungry and wander into the kitchen... by that point... could have been boiling half the day and pre peeled. I know with any cow stomach, she boils it for a good while and after it cools, scrapes the insides till the outer skin stuff comes off. I'd assume the same with the tongue or it would be tough. I'll go ask though.
