I am looking, have been looking, for a recipe for creamed onions that uses cheese. I can find tons of recipes without the cheese, but I want THAT one! My grandmother used to make them all the time and the recipe died with her. Anyone?

My grandmother had an old copy of the "Joy of Cooking" cookbook first published in 1932 and many printings since. This was one of her favorite recipes. Maybe it's similiar to your grandmother's recipe.

Creamed Onions in Cheese sauce
1 lb boiling onions (boil for two minutes and then peel) Or 1 lb of chopped onion
Steam the onions about 10 minutes until tender - this keeps the flavor in the onion

Cheese sauce is made while the onions steam. I make the whole recipe because we like it on broccolli and cauliflour too. When the sauce is completed place the onions in a bowl and pour in enough of the cheese sauce to coat the onions. Makes 4 servings.

Cheese sauce
2 Tbs butter melt butter in a sauce pan.
2 Tbs flour add and stir until the butter is absorbed.
1 1/2 cup milk add slowly until it begins to steam.
1 cup or less of a mild grated or diced processed cheese. (Mild Cheddar, mozarella, swiss)
stir until cheese is melted and a smooth sauce is achieved.

Seasoning choices to add to the cheese sauce
First choice:
1/2 tsp salt
1/4 tsp paprika
1/4 c chopped parsley
dash of cloves

second choice
1/2 tsp salt
1/2 tsp dry mustard
dash of cayenne
2 TBS sherry

Third choice
add 1/2 cup sauteed mushrooms (1 cup of fresh sliced mushrooms sauteed in butter or bacon drippings)
1/2 tsp salt
1/4 tsp paprika

Here is a bonus recipe that my family loves.
Scalloped Onions
6 large onions peeled and sliced
4 TBS butter or bacon drippings
Sautee until onions are tender
Salt and pepper to taste
Settle into a baking dish and top with
1 cups soft bread crumbs
1 cup grated cheese
Sprinkle of paprika
Bake at 375 degrees until the crumbs are brown.
