Cull the eight week old roo or not?

After the last two roosters, I said no more but the latest flick of eight, they snuck one in. No one I know wants him, of course! Do I wait, or do it now? Do I give him a try at not being a nasty, stacking beast?

If you decide to eat him, better to wait until 16-22 weeks. Bigger and still fairly tender, especially if you let the carcass rest for a few days in fridge.

if you want a male, sure, then keep him for longer to see how he grows out. But, sounds like the idea isn’t very appealing to you. Since you’ve had a couple of bad experiences, you may want to Just get a male that is a year old or so. That way you avoid the Teen hormone surge and can find out about his temperament from previous owner.
 
It looks like you prefer not to have a rooster, so I vote you cull him now.

he's too small to eat right now.

It's not like the meat is poisonous or anything--it's just a matter of whether there's enough meat to be worth the time to butcher the bird. Some people eat quail or pigeons, which are pretty small birds too.
