Cull today

My inlaws say growing up they used to eat the same day they processed, but everyone says wait 3 days. I have only eaten ones I've let sit, so I can't give you another answer.
 
I too have only eaten rested birds. I watch a number of cooking shows though and there are alot of places around the world that the bird goes right in the pot after slaughter but from what I recall it was always slower cooking methods that were used. I even checked my Storey's Guide and it says at least a day.
