Culling a long time rooster. Is there a better time of day?

The meat may be tasty. But it will take some prep. I had a rooster that age, and I tried to cook immediately in a pressure cooker - I thought that would soften anything. It didn't. It was like rubber, could not eat it, even the dog could not eat it. So keep that in mind.

We haven't processed any birds yet but aren't you supposed to let the meat rest in the fridge for a few days before cooking?

Personally - mine was terrible. Definitely rest in fridge, and cook very slow. The pressure cooker did nothing.

Rest the cleaned carcass for at least 3-4 days.
IF you plan on eating him.

When you rest the meat, put some lemon juice, buttermilk, milk, or even wine (cheap kind) with that old rooster in the fridge. That will help tenderize the meat.

Yes, it will occupy one of your cooking pots plus some fridge space, overnight at least.

Pretty difficult to rehome a bird that's attacked someone so much that their "legs are scarred beyond belief." You'd have to fully disclose that fact as well, you could be legally liable if he attacked the new owner.

Not to mention the fact that it’s usually hard to re-home even a “Good” rooster, they are generally not the sought after sex in the chicken world.

Hey, oh yes I agree with most posters that this is a sooner rather than later deal. Like tonight.

I had my 1 yr old rooster do a little dance and they to attack me once. That was it for him. I have a toddler and small child and will not mess around with any form of aggression. Be it light or whatever. If it was just me, I'd say ok I'll give him a chance until it gets bad. What you describe is terrible.
I took mine off the roost in the evening and stuck him into a self fashioned killing bucket. He was just too big to handle the legs, wings and knife at the same time. My husband is a vegetarian and can't stand any sort of animal killing, so he is of no help.
My girls didnt even really notice, except they stray apart now when free ranging. Not a problem really since we have dogs and lots of neighbors to protect them.
