CX butcher age

I have an Amish family that butchers and packages my birds. Do I still need to rest them in the fridge. There is no way I can fit 30 birds in my fridge..

Yes they need to rest for a day or two .. we butcher 4 at a time because they need to sit in the fridge fir two days ...

Someone on here says he butchers as soon as one crows , then they are mature and will start to get tough... w just weigh the biggest ones and butcher at around 9 pounds

I found my meat birds ( grazers), grew very slow this year because it was so dry and the grass was terrible, now we are finally getting rain
