A few thingsIt’s the 26th day and we’ve had an egg pipped for 24hours. Should I assist? Also a few other eggs moving. Why would this be so late

If so then you treat the pip time wise like a normal egg
I don’t do chicks so I’m not certain on times but for my ducklings

External 24 then if nothing you help
If it misses the air cell and goes straight to external then it becomes 48 hours
I know chicks are faster but I don’t know exact times

Ok. However, the beak has been out for 24 hours.Ok if the beak is out, it's external. It will take a bit to start zipping, sometimes 24hrs for "hatch".... Patience.
21 days is a guide and some give it an extra few days (good that you did). "Late" hatching can be due to fluctuation in temps during incubation, ambient temps affect this as does humidity.
