Dehydrating quail wings

Can I immediately dehydrate quail wings after a cull? Should I freeze them first? How do you guys dehydrate? Time & temperature.

I have no idea! Never wanted to dehydrate quail, made plenty of venison jerky and pemmican, though.

I have no experience either, but I would freeze them first to kill any potential bugs.
