DEVILED EGGS?

My hens have been laying for about 6 months, and apparently I haven't tried to make deviled eggs... Today I boiled a bunch of older eggs (not bad, just older) and they cooked and peeled beautifully, but the yolks are all at the fat end of the eggs! No good for deviled eggs! Is it because I stored them fat end up? Or are they just too old for this? Did I have too many in the pot when I cooked them? I need to know so that the people I sell eggs to can make them, too... This pic was taken just after peeling. Look at all those yolks showing! Any ideas?

I always store mine pointy side up (although a couple of my gals lay pretty "round" eggs. No idea if that has any effect on it, but I read somewhere that it did and I figured I've never had a problem with lopsided yolks so it's all good. That's an odd bunch of eggs tho!
 
I just went and turned all my other eggs pointy end up... We'll see what happens! I went ahead and made some UGLY deviled eggs, and I guess we will have some egg salad!
 
I've wondered about this....how to have to yolk centered in the white for the best looking deviled eggs.

Ugly deviled eggs are egg salad aren't they......lol?!?
 
Haha, yes, they are... And I'm wondering if you have lots of room in the pot, so the eggs can move around while boiling? Maybe stir a few times? Such important questions...
