Depends when really. The ones I want to cull from the groups will go on sale first once I now if there roos or hens. Also depends on the breed also. HRIR and the LB take longer to mature. Really don't know what you have in color, type etc till around 9 months. The Delawares a bit sooner than that. I try to sell them first. But don't wait too long. I love beer in the butt chicken on the grill. LOL It's usually the poor roos that get it. Hens go fast. Roo's not so much really. Harder to sell here. Processing is no big deal with me. Been doing it a long time. Doesn't take me very long at all. But I usually only do 1-2 chickens at a time.
