Dirty eggs and double egg yoaks

Let's go way off topic here. Why would an egg producer keep eggs "in stock" for 45 days? I've never heard of such a thing. They are producers not an egg warehouse. It only makes sense for them to get the eggs to market as quickly as possible. No sense for them to store them at all.

Back on topic. Clean the eggs off. Doesn't the thought of having poop in your refrigerator bother you?

One of my BO's has laid a double yolker every time since she started a few weeks ago. None of the others have, just the one. Anyway, I would not worry about eating a double yolker.

The mineral oil is interesting. I'd heard something about putting something like vaseline on them, and not needing to refrigerate them. I forget for how long it was. Something they used to do before a lot of refrigeration was available?

My apologies. I should have been more specific there. Not the producers, but rather that part of the industry that packages and then distributes the eggs. [I tend to lump them all together in my mind as part of the entire assembly line] And the reason they warehouse so many is the same reason we enjoy such bountiful production in the spring. No matter how much you might try, and how much you might succeed with faking the light cycle, to a certain degree, you just can't fool mother nature. The very best egg production time will be during the spring months. And it's an issue of supply and demand. Demand is highest around Easter, but then drops off sharply. The only problem there is that the hens didn't get the memo!

For the same reason that every other food production company takes in the crops that our farmers grow. You don't really think those freshly frozen peas, grown by the fine folks at Green Giant, of Rare Earth, Minnesota was produced in the middle of December do you? No, of course not. But there they are, in our grocers freezer cases, year round. We can pretty much count on it.

Sorry if I wasn't clear enough there. Never my intention to be obtuse, but then, sometimes I get to typing so fast. I know the thought I'm trying to convey. I neglect to realize that not everyone is clipping along at the same pace! Sorry.
