dispatching geese?

Any advice on dispatching geese? One is close to 25 pounds, the other is smaller. We've never done this before but can't find a processor close by to take them to.
 
Broomstick method, I've read, is recommended for geese. However that was a British book. Basically it involves a broomstick behind the head (head on ground) and a sharp hard pull upward. But it takes a lot of strength and probably a helper as well.

Alternatively you might truss the animal in a sack with its head protruding, stretch the neck using string and a holder, then dispatch using a very sharp large axe.

We have White Chinese and have dispatched them two ways.


A few times with a 22 shot to the head and then chop off the head.


Lately, I have just been holding them and DH chops their head off.



We have also scalded and plucked, use plenty of dish soap. We have used wax - messy, uses A LOT of wax but can be quick to pull off the carcass. And we have also skinned.



Goose is wonderful.
