Has anyone tried scrambling, dehydrating, then powdering their own egg powder? How well did it dry and reconstitute?

In most of the dehydrating groups of which I am a member, they strongly discourage dehydrating eggs in a home dehydrator for food safety reasons. The one egg product I do dehydrate is cured egg yolks, which we use to grate over pasta and other dishes.Has anyone tried scrambling, dehydrating, then powdering their own egg powder? I was thinking I'd dry the egg, powder it, then put the powder back in the dehydrator. I have not tried powdered eggs, but it is generally discouraged. I do frequently dehydrate whole meals like a chili, and that turns out great!I was thinking I'd dry the egg, powder it, then put the powder back in the dehydrator.
