I know this might sound dumb but, do different breeds/ egg colors have different nutritional values? With so many different breeds and egg types do some invest more into there eggs biologically versus others?

Simply put...an egg is an egg.

...and that was not a dumb question, I have seen this question quite a few times on here.

As I understand, what you feed the chickens affects the nutritional value. Chickens that get a lot of grass and plants produce eggs that are higher in the fatty acids you need (omega 3, I think!)

I give my chickens a little flax seed in yogurt every once in a while to increase the omega 3s in their system. You are what you eat.
