Do Eggs change color as time goes on?

So colors can change, but am I correct in understanding that each hen typically lays a consistent size or shape? Is that how more experienced flock owners know who is laying which eggs if colors change? So intrigued! 

I have around 200 chickens/20 different breeds because I sell eggs. I wanted color variety. It's funny to see just how inconsistent the eggs are from day to day. I really enjoy the eggs that are shaped like bullets!
