Act like your leaving away from them, when they get close, turn & grab their head & hang on. They'll panic ! I've trained geese & turkeys not to mess with me.

Mine don't, but I've trained them not to. They will pluck other fowl, though.

They love the tender part right behind the knees best. Leaves a wonderful bruise too.

The blood blisters are best made when they clamp on and twist while you are hopping on one leg.

Ya gotta watch out for those "elbows", the first joint on their wings. Those pack a wallop too. I've gotten a brief nosebleed and my glasses knocked several feet away off my face.

They can be awful to chickens also. I've had them gang up three geese on one chicken - two would stand on the chicken while the third one pulled feathers out. Horrific to watch. But I have heard that some breeds are far kinder than others so perhaps there are some out there who don't bite.
