I THINK the one in the middle with the copper coloring around the neck/hackles is a cockerel, and the other two are pullets, but can somebody with a better eye for these things confirm for me as best they can?

How old are they?

I think you might be right about the genders, but I would wait a bit longer to be sure before you make any permanent decisions.
