We wash and refrigerate, because I never know what dozen we will grab to sell.....

However when we have a camping trip planned we do not wash the eggs and take them in the backpack...

Nothing like a great egg in the wilderness...

Thanks. That's what I thought. I know about the bloom and have never washed it off. I've been getting farm fresh eggs from a woman I buy goat milk from and she didn't wash it off. I will leave them on the counter since I know there no way they will last a week anyway. We eat A LOT of eggs.

Thanks.

I remember my grandmother that had TONS of layers never refrigerated hers. Around here, we aren't diligent about it if it's for our own use. For crying out loud, we're the only country that requires it.

We sell nearly all of our eggs, so as soon as they are collected for the day, they are properly sanitized (per our state laws) and refrigerated, as the bloom has now been removed. I only actually clean those eggs that need it. If they are clean out of the nest, they go straight into the carton. I figure it gives them just that much more protection.

I did quite a bit of research on the topic previously, as we plan to get into some serious production and want to stay on the right side of the law. Let me tell you- it's pretty exhaustive.
