When Smokey Blue, my boss Rose Comb rooster, started biting at me at 10 weeks of age, I also started picking him up. He did not care at all (he was calm) and the biting continued.
Next time I picked him up, I cuddled him with my left hand/arm and petted his wattles with my right hand. That disgruntled him and he struggled a bit. I continued till he calmed, and then holding his wattles lightly, I touched the top of his head and comb with my face (nose and cheek) kind of petting him with my face. (holding his wattles helped me be sure he would not try and peck my face)
Woohoo, he hated having me touch him like that. He vocally complained and struggled I gently held him until he stopped his fussing. He has stopped biting for the last two weeks.
I am not saying this is the correct way to handle your boy, but it has worked for me .so far.
