Do you put an expiration date on your eggs?

If you mark your eggs with an expiration date, how do you figure it out? I have read 8 weeks. We don't wash our eggs, unless really gross, which extends the freshness.
This is for selling to the public.

It's most likely that your state ag department lists their 'sell by date" requirements (not expiration date). I would put the pack date on the box over the sell by date (since you are selling them on the spot). That might also encourage people to use up their eggs instead of letting them sit in the fridge. I wouldn't want people eating my 4 weeks old or older eggs. The whole point of buying from a small egg producer is to be eating the freshest and tastiest eggs out there.

If you sell to friends and family then sell them as fresh and within a week or two of collection. If you sell to a farmers market or running a small egg selling business then that is another "ball of wax". Contact your local County or Health Dept. They will have requirements regarding your eggs and or any permits that you need.
