Does a heritage turkey taste better than a heritage chicken by comparison?

Is it basically true that people will buy a heritage turkey over a commercial white, while with chicken customers usually only want the cornish x and not a heritage breed? Plus you can hatch your own turkeys to sell. Is that a huge factor for you turkey sellers out there? Seems like it could really help your profitablitiy, and make you self-sustainable. That's what the chicken sellers dream for, but they are stuck with the cornish x.
 
While you can hatch your own poults, the heritage have the same issues for commercial meat production because they are much slower growing and lack the breast meat of the Broad Breasted White.

As to whether or not you can sell heritage turkeys and have a good market at prices high enough to turn a profit, that depends both upon the area in which you live and how good you are at marketing.

Around here, all the markets sell turkeys for 25 cents a pound at Thanksgiving. So the public is well trained to think turkey is cheap. It would take a lot of salesmanship to persuade them to pay $4 a pound.

Not saying it can't be done, but it is not going to be effortless.
 
So is it like chickens, where the vast majority sold are the standard commercial breed, and hard to sell the heritage to people because of the small breasted issue?
