Does anyone have a collection of recipes for deboned chicken?

    Made a couple of beer can chickens the other day and deboned the remaining meat. Trying to come up with some good recipes to use it in. Thanks

    Our favorite is a simple Chicken Chili. I make it with the dark meat from our butchered standard or mixed-breed roos. I usually simmer the birds until their meat melts off their bones, pick & separate the meat, and freeze it separately. The white meat I use in salads or soups, the dark meat I use in any recipe that calls for meat. Here's what I use for Chicken Chili:

    salsa in a jar
    frozen diced green peppers
    tomato sauce
    diced tomatoes
    canned kidney or pinto beans
    frozen corn
    de-boned & cooked dark meat chicken, chopped

    serve over rice &/or with cornbread, topped with shredded cheese & diced onions if you want

    The amounts vary depending on how much chicken you have to work with and how far you need to stretch it. You can put everything in a stock pot or crock pot and simmer together, or just dump everything together cold and heat it up by the bowlfull.

    OHH if you have enough ...put it in the crock pot and add 1 can french onion soup and 1 can cream of celery soup. Stir together, cook on low till heated through and serve on fresh rolls or buns or what ever you can. Yummy. My oldest son also likes to make a chicken commercial out of this.

    Cook some Fettuccine and put it on a plate, heat your chicken and add it to the fettuccine then cover with this Alfredo Sauce.

    You will think you have died and gone to heaven.

    Olive Garden Alfredo Sauce

    Ingredients:

    1 pint of Heavy Cream
    1 stick of butter
    2 T. Cream Cheese
    1/2-3/4 C. Parmesan cheese, (real cheese, not that stuff in the green can)
    1 tsp. Garlic powder

    Put all ingredients into a saucepan with a heavy bottom and turn the heat as low as it will go. Stirring occasionally let it all melt and simmer together until everything is well blended.

    Sprinkle the chicken with a little taco seasoning and make some quesadillas .

    Mix the chicken with a couple of cans of mixed vegetables (drained) and some cream of chicken soup (not diluted)…put it in a pie crust and make a chicken pot pie.

    Chicken fried rice.
