The most time-efficient thing would be to make it a building kind of like a typical horse barn, with a central aisle and pens on both sides plus pen(s) at the far 'dead end' of the aisle. This saves you Many Many Steps.
In terms of siding, it is more economical; however it will use as many or more posts, and possibly require a bit stouter rafters or trusses, because of being wider.
It also depends on the land available - sometimes the site is clearly more suited for a long-and-narrow building with runs off just one side, other times it is a more squarish area suited better for a squarish building with runs emanating out from it in all directions. (You CAN have runs on the fourth side, you know - the side from which you enter the building - just have to leave a pathway between them to get to the bldg door)
