Hi, I'm posting this for a friend.

She states that this hen was fine one day, and like this the next. She has no idea what happened.
Is this just an injury, like a chicken "pink eye"? I am unsure what it is. Sounded strange that she was fine one minute, like this the next.

Personally, I think she got pecked/poked in her eye and now she's just blind.

If she has no symptoms of anything, I'd say the same thing, got pecked or poked. I'd suggest they rinse that out with saline solution though to see if there's anything in it, then put some Terramycin ointment in the eye. If no Terramycin, triple antibiotic ointment (without painkiller) can work too. I'd put that in twice a day for a couple of days to see if it goes away. The ointment would keep infection from starting.
 
There may be pus in that eye, chicken pus is firm, kind of cheesy. If that is the case it will need to be removed. I cannot tell from the pictures if it's pus, or if the actual eye itself is milky.
Video below showing pus removal from eye. I would do that, flush the eye out well with sterile saline or eye wash, and then use the ointments recommended above. If there is pus in the eye it has to come out first for the ointments to help.
 
I agree with the treatments to get the pus out of the eye, and use some saline or eye wash to irrigate the eye twice a day. The Terramycin (from a feed store) twice a day is great to use, but get some plain Neosporin if your state does not allow you to buy Terramycin. If you notice any respiratory symptoms, such as nasal drainage, crackles or wheezy breathing, or swallowing mucus drainage, it might be good to use an antibiotic. Tylosin, Denagard, and oxytetracycline are typical antibiotics. Here is where to buy Tylosin:

Had this happen to my chickens, for me it ended up being a respiratory illness. Clean her eyes and check for mucus/ stuffing nose. I used antibiotics, Vetrx, cleaned her eye, and rubbed lime on their nose daily. Took some time but they all got better, the said illness did spread through my flock.
