I'm in the same boat as the OP, and wondered if a year later you guys had made any changes to your Deep Litter system? I really want the benefit of the compost for my garden, as well as lower maintenance. I'm all for the lazy man's method. 
@Amiga Can I ask why you prefer wood chips over straw? I've been hearing that wood chips do take longer to break down, but if I am only "harvesting" the compost once or twice a year, this shouldn't really be a problem right? I imagine it keeps the bedding drier than straw? I will also make sure to keep their drinking water elevated where the splashing can drain away.
I've been scouring past threads trying to read up on using the deep litter method for ducks, and sadly there isn't very much information out there, in regards to ducks.
