does meat from an older, more muscular chicken taste more like the dark meat from the legs?

i’ve been a vegetarian since i was 9 so don’t know much about meat. when i was a kid my favorite part of a chicken was the dark meat and i found the white meat very flavorless and mealy. i read that the dark meat is like that because of the amount of muscle, so i was wondering, would an older more muscular bird have more of a dark meat flavor and texture through out? tyia :)
 
An older bird or rooster, I would stew down so the meat is more tender. Otherwise look up recipes for (forgive my spelling). coq co vin, chicken fricassee, chicken and southern dumplings, etc. You can make a fine meal if you are willing to take the time. You don't want to fry an older bird as it will be tough and hard to eat.
If you don't want to use wine in the coq co vin use a small amount of balsamic vinegar and water as needed.
