Well first off...get your fanny to the courthouse, pick up the paperwork to file a small claims case and sue her butt. Secondly, for the damages, consider the vet bills, the cost of each hen for replacement costs (the $20 each is more than reasonable), for damage to your property...any fencing, wire, etc add that and add the filing fee for the lawsuit and the fee for having her served by the sheriff.
Tell her lawyer you do not accept any offers period point the end. Set the thing for trial, get your reports, your pictures and etc etc and whether you like it or not, seek to have the dog put down. I do not like it either but let me explain to you why...
1. - rehoming him just makes him someone else's problem;
2- - the dog is a menace and dangerous
3. - the dog can and will at some point in the future hurt a human, most likely the child trying to protect his/her animals'
No it is not the dog;s fault completely, however, his temperament has demonstrated itself repeatedly and that is not something to mess with. This owner needs a wake up call and a big one. It is the owner's responsibility to keep their dog from damaging others' property, attacking without provocation, killing livestock and poultry and being a menace.
Time to pay the piper. Her attorney is simply playing the game...time to call the bluff sue her and take no offer under what you feel is reasonable and have that dog put down before it hurts someone.
