Barbed wire might keep humans out, but not most chicken predators, and digging under that fence is easy too.
Some dogs will be fine, some will be good with serious training and time, and some just love chicken, and the chase, too much. Your birds need a secure enclosure, and your dog needs serious training, on leash, and maybe with a shock collar too, and constant supervision out there. Most bird dogs are very trainable, and life would be simpler if you could 'chicken proof' her. It will be good training for you too, when another dog enters your life.
I found training my puppies pretty simple, but it's more difficult with an adult dog, and again, some are easier than others.
