I have a couple of pics here and was just wondering your thoughts on breeds and whether or not they are a drake or hen.

Looks like 2 Khaki Campbell Drakes

1 Khaki Campbell Duck (Looks mixed to me)

2 Blue Swedish or Blue Swedish duck mixes
 
Blue swedish and khakis. Pure or mixed, who knows.
I would say from left to right
1st pic drake, duck, drake, duck
2nd drake, drake, drake, duck, butt ;)
3rd drake, duck, drake, duck, drake

The 2 khaki drakes have drake curls on their tails. Its hard to say for sure about the blue.
 
You can tell by their voices...
The males have a wshispery quack, and the females have a clear, loud quack.
 
That's what I was scared of. The two Campbell drakes on the left was got by my wife from a farm store. I was hoping to have hens.
 
Yup. I would say you most likely have 3 drakes and 2 hens. Unfortunately, that is at least 2 drakes too many. I would start looking into an alternative situation whether it is rehoming 2 or they go to freezer camp.

I can't say that I have ever cleaned a duck. Can you clean one just like you would a quail. Just pull the breast out.

My wife will not part from the two khaki drakes. I have two hens so I will probably put the Swedish drake into freezer camp. I will then have two drakes and two hens. What should I do.

I'd add two more ducks if your getting rid of the other drake.
