Dry skin?

So my black feathered chicken is molting - but it look like she's finished. The bald spot on her chest is filling in. However - she seems to be shedding dry skin (dandruff?) now. Is this normal? Should I be feeding her something different (other than regular chicken food)? They also ocassionally get some chopped up vegies with rice & mealworms as a treat.

When the new feathers come in they are covered by a keratin sheath. As the feathers mature the bird grooms these sheaths off and it looks like dandruff all over the floor or under the roost, where ever the bird happened to spend time preening. As far as feeding, a little extra protein is always a good thing for molting birds. The meal worms are great, so is mashed hard boiled egg or scrambled egg. You can also feed a flock raiser type feed that has a little higher protein.
