Drying Rack before wrapping

In my basement there was a half bath with a window. So I insulated the crap out of it used tile board made for bathrooms on the walls and ceiling. it is 6X6 I installed hooks to hang 3-4 deer. I made the PVC setup to look like motars for the chickens. I just added shelfs to hold other items veggies and the such. I stays between 35-38 degrees and it is only run on a A/C unit Total cost was right around 450.00 for everything I needed. Best thing I ever did as my deer tastes so much better when hung up for 7-10 days before butchering. I also have bought a few hogs at auction that I brought home and processed as well.
 
We bagged them last night after drying for a few minutes in the dish drainer. I'm a little worried that I didn't get all the water out. What is the downside to not getting them super dry?

Love the beer bottle idea... We are rigging up an outdoor sink for next time. Meat processing in my kitchen is not something I want to do again.

This gives me ideas on how I can spend more money!

But seriously, I love this idea. I have three refrigerators (but I don't have a problem. No, no problem with collecting refrigerators here!), and it is still hard to fit everything in when everything is full swing during the summer. Having a walk in would solve many problems and let me get the refrigerator off my patio.
