Hi, All!
I'm not a very experienced baker, but we are throwing a party for our new business and employees. I'd like to make cheesecake or some other dessert for them in individual servings, like cupcake-size. I'll have at least 7 duck eggs and lots of chicken eggs tomorrow to bake with.

There are great recipes here on this forum, but can you tell me how to change the recipe for individual servings? How long should the baking time be, do I need to change the temperature? Can I just grease the little cupcake shapes in the pan?

thanks bunches!!

When I have had them the cupcake pan was lined with cupcake liners. I have never made a baked cheesecake in a cupcake pan. You could do a no-bake one -- here's a recipe for that http://clutehomestead.blogspot.com/search/label/CHEESECAKE (for some reason it's not showing the cheesecake recipe, just click on the cheesecake tab on the right). If you were doing a baked version, you'd probably just watch it very closely until the top was set.

I have made individual cheesecakes in a muffin tin. You just line the muffin tin with paper liners and fill them up with the batter. I make Oreo cheesecakes this way, with an entire cookie serving as the crust in each muffin liner. Do a Google search for Oreo cheesecakes, I think the original recipe came from Martha Stewart.

I just looked up the Cookies and Cream cupcakes, Martha Stewart, and not only do they sound divine, they're so beautiful with that whole Oreo cookie on the bottom. White liners really let the cookie show through. Great dessert to travel and served on one those tiered cupcake holders.

Not to mention they taste amazing! I totally recommend making them, they are so easy and so good.
