We're over-run w/our ducks' eggs! Do they make good devilled eggs? I'm thinking of making some for T'giving. Anything different I would need to do?

Thanks so much!

Make great egg salad too, also wonderful for baking. I haven't made deviled eggs with any but I'm sure others have.

The only problem I've had with hard boiling duck eggs is how it's nearly impossible to get the shells off without damaging the egg (mine usually end as egg salad, as Miss Lydia suggested)...unless you know of a trick for removing the shells, it might make it difficult to do deviled eggs.

Good luck!!

If you have too many, give them away! Sometimes the local food bank will except them depending on where you live or give them to neighbors because they are so good for you. I attached one of my favorite links about the eggs to here. They are great for people with heart burn or really acidic stomachs. My grandpa who is like 60 he eats eggs for breakfast every day and I started giving him some of my duck eggs and about two weeks later he was telling me he had not had heart burn all week... and at this point i hadn't even told him about how good they are for you. I am a believer!
