The dedicated egg-steamer machines hold the eggs upright. Is there any reason you can't use a regular vegetable steamer and
lay them on their sides? Or just simmer them in a pot in shallow water?

Also, how long to they have to steam?

thanks

I steam eggs in a regular metal steamer like you would use to steam veggies. I put about an inch of water on the bottom of the pot and cover it. The time depends on the size of the eggs. For large, about 20 minutes, less for mediums. When they're done, I immediately put them in cold water (ice water is better).
