Do your chickens stay in the coop all day? If it's a big walk in coop, why can't you add poop boards? That would cut down the poop in your bedding. Can you post pictures of your set up?
I have an 8 x 12 coop with pine shavings as bedding. I have a poop board with PDZ in it, that is scooped every morning. It's dusty in the coop, but doesn't smell bad at all. My chickens are mostly in the run all day, I also let them out to free range on weekends and during the week sometimes. I add some fresh shavings every couple months and change all the bedding out once a year or a little longer. There is plenty of poop stains on everything, that's chicken keeping.
