If you're putting them down to eat 'em then do the "off with their heads" routine since you will need to bleed them out anyway. If you do it over a can or bag, you eliminate a lot of the mess. I actually use a pair of pruning shears I can operate with just one hand for this. I sharpen them right before use. I take my can, the hanging strings, shears, and head out to my "work" area.
