That's pretty subjective. We keep ours to their third autumn, when the increased egg size of a mature bird is no longer worth it because of the decreased laying frequency. But they will keep laying for years, as long as you don't mind the fact that they lay fewer eggs.

As far as the price--depends on where you're located. I would probably ask $10 each but then settle for $9 each or so, if I were selling them. Lots of people want eggs NOW, and that's what they're paying for when they buy an older hen.
