wait, that IS something I would do with her...... is that normal for them not to have those little tufts? (doesnt really matter, she is healthy, cute as a button, funny, and leaves me green eggs.)

They don't taste much different, although to me the really dark ones do taste slightly better, but honestly the taste of an egg is all dependent on the chicken's diet who laid it. The more free ranging/pasturing, greens, bugs, and other veggies and the sort, the better tasting the eggs.
ETA - Guys, those aren't Tufts. Those are beard and muffs. Note the beard
TUFTS are only found on Araucanas and Araucana crosses, and are prominent curly feathers protruding from the side of the face, no fluff or such, no beard.
