Easter Egger hen & Barred Rock rooster

I have several Easter Egger hens but my only rooster is barred rock…….. if I hatch out their babies what color eggs will they lay?

Not very likely though. Olive is a combination of the blue/green gene and a dark egg gene (such as that of a Welsummer or Maran) or another olive. BR eggs tend to be light in color, so unless the mother lays olive it's not possible. Depending on the shade the mother lays, I expect most of the eggs will be a light green.
