Third category needed for sure! What an interesting (and beautiful) looking bird - I also have no clue though my EE girls are total spazzes and sparred around that age too.
I wish I had documented the growth (weekly) for my EE girls and will do so in the future - I'd love to have a recent thread complete with tons of pics showing growth and feather coloration from start to finish because, as you said, it is just so up in the air! You never know what they will end up looking like!
I think I am going to do exactly this. I’ve got a spunky chubby ideal chipmunk EE that I already think is a cock, I’ll try and document it’s growth (as well as it white EE sibling).

Yes! Please do. I'm annoyed with myself for not doing the same. I will with my next girls.
 
Those work great! I’m almost 100% positive that it’s going to turn out like mine as well. The feathers are already coming in similar.

I did notice today that Whitey’s feathers are noticeably less even than the other EE and the welsummer (the three I’m documenting). Not sure if it’s worth noting or not at this age.

I wouldn’t say it’s too concerning at this age. It also could just be a slow feathering pullet too.

Was your bird a he or a she? Any new pictures?
I would guess a rooster because of the sharper shape of the saddle feathers, usually hen feathers are more rounded
He was very much a roo. His rust red feathers, messy pattern, plus his male feathering (though his was much more rounded than our other roosters and he had the thinnest legs of the whole flock!) he was also crowing. The EE and NH both went to a home where they have their own hens and 15 acres to roam on so I don’t have any pictures of them now.
