I am wondering what the best combinations are to make Easter Eggers and Olive Eggers

Next year I am getting some whiting true blues, BCMs, buff rocks, and pearl white leghorns, I am wondering if any of these crossed with each other will make EEs or OEs

Basically anything bred to a blue egg layer will produce an EE/OE. Mix a brown egg bird over a blue egg bird to get a blue to green egg. Mix a white egg over a blue egg to get a variation of blue. An EE is essentially a blue egg layer that isn't an actual breed - a mutt. Same with OEs (and OE is an EE that lays a green shade of egg).

Darker brown eggs over blue, generally make darker olive eggs (Welsumer, Marans, etc)
Lighter brown eggs over blue, generally make lighter olive eggs (Orpington, Rocks, etc)

Blues x Marans should make Olive eggers
Blues x Leghorns should make Super Blue Egg Layers or Sapphires
Blues x Rocks will give green eggers of various shades

Marans x rocks will give slightly darker brown eggs, but not so much to be really desirable.
marans x Leghorns will give regular light brown eggs.

Rocks x Leghorns will give light creamy tan eggs.
