Easter eggers?

So just wondering are easter eggers specifically just one breed or a mix of breeds. Like if I had a araucana/leghorn/barnevelder would that class as EE?
 
Yes, generally any mix of chicken including araucana or ameraucana is considered a EE. Usually, they have a beard and/or muffs, and often lay a blue, green or other colored egg.

This is my Americana, we got it from a hatchery but people seem to think it’s an EE so idk what do you think?

That's an EE. It has absolutely no Ameraucana color characteristics. There are only two hatcheries that actually sell true Ameraucana, the rest sell EEs and say that Ameraucana are actually EEs to make it sound better. So, I'm sorry to say, your chicken is an EE and will lay any of one of the following colors; blue, blue green, green, brown (of almost any shade), and cream.
