We have found a great way to get the shell off of fresh layed eggs. I just ran across the idea one day when I boiled our eggs. I didn't have time to shell them because they take forever and don't even look like a egg when you try to peel fresh eggs.
So boil your eggs as normal. I typically boil mine for 20 minutes because we have large egg layers. They after boiling I put in sink let set in cold water for about 10-15 minutes then put them in the styrofoam egg carton and back into fridge until later that day or the next day works the best. Then tap them on counter and shell peels right off. Our family loves deviled eggs. I usually cook 2 dz at a time. I too deviled eggs with jalapeño and cayanne pepper.
