I was born in Spain, grew up in San Diego and migrated northward.
THe only good Mexican food I get is what I make myself, learned from my Mexican maternal side.

For the beans, either soak overnight
or
cover with water, bring to a boil. Turn off the heat and let cool for an hour.

Drain, rinse and cover with water again by 2 inches.

Simmer til done. I add onion and garlic to the beans as they cook.

Once soft, melt some bacon grease or lard in a frying pan, maybe a soup spoonful.

Using a slotted spoon, lift the beans from the pot, letting them drain. Put them in the frying pan and quickly mash them as they fry.

My grama used the back of a spoon to mash, but potato mashers were put on this earth for a reason and this is one of them.

Just mash mash mash until they are the consistency you like. You can add salt as needed to taste. You may need to add a bit more grease. You don't want them to dry, but stay creamy and moist.

Eat as desired.

They go great with tortillas
