I think it's more that I can't handle spicy food. Perhaps where my brother has eaten Thai food, it's not truly authentic, so yes, the definition really depends upon who's saying it. lol He lives near Baltimore, Maryland, so has much more access to restaurants run by people who stay true to their culture. In my part of North Carolina, many things are homogenized so that the greatest number of people will like it. It can be difficult to find those rare gems who stay true to the original recipes, but they're out there.

Living with such fresh food sounds so good.

I agree with you that at least some of the health problems that are rampant here are due to the way the food is grown and processed. Part of why I want to raise chickens in my backyard is my wish to eat more organically-grown, natural foods, and eggs are wonderful. Unfortunately, I didn't inherit my mother's green thumb for growing produce, but that doesn't stop me from trying. lol

It's fascinating to me how cultures can be so different from one another. Cattle is prized for many reasons, then, and not just for religious ones.

Not all Thai food is spicy and you can in any case tell the waiter to hold on the chillies. Don't be pushed into eating a spicy dish if you don't want it. My wife rarely gets angry but a waiter who ignores her instructions about chillies gets a very black look.

There's no specific religious objection to eating beef here. Buddhists say they won't kill animals but watch them with a mosquito! My wife can spot one at 10 feet and get it. Thais are content to eat meat killed elsewhere but refusing diy also has something to do with avoiding the mess of processing, I think. Monks are usually vegetarian but other Buddhists are not expected to be. It''s a very tolerant philosophy. The old religion was Hindu but little remains of the culture and beliefs other than some ruins and the occasional small idol hanging around.

Your chickens will provide you with organic matter so you should do well with vegetables.

My wife has just returned and is still in good health! She enjoyed the boiled egg so much that she has checked the nest and taken the ones that clearly are without child. She told me that the other egg this morning was for me and I answered that I had left it to see whether she was rushed to hospital.

I love spicy food. I grew up on Mexican food and eat just about anything. My sister in I would have chili eating contest as kids. My Mother being Mexican cooked all parts of animals. My father loved food and made me a foodie and I have his cast iron stomach. My husband and I travel just to eat the food. I am also a gambler so I spend alot of time in Las Vegas. It is 2 hours from where I live. We kept wanting to try this Thai restraurant in Las Vegas that is rated as the best in North America but it just never work out. The are one of the few Thai restraurants that also serve northern Thai cuisine. http://www.saipinchutima.com/ I finely went on my last trip that was a family reunion. My husband had a few to many free cocktail at the casino and when we placed the order they asked how we wanted the food spicy wise rated 1-10. My brave husband said 8. The waiter almost fell to the floor. and kept saying 8. And my husband kept saying back 8. I think that was the hottest food I have ever had. My husband kept sweating. But it was good. I got my hot fix I crave. You are right not all of it was hot. The have the biggest menu I think I have seen here for Thia food. http://www.saipinchutima.com/menu.pdf We did have the the sticky rice with Mango after to cool everything down. I have to say as I am getting older my stomach is not as good as it use to me. But I do take a low dose chemotherpy and other drugs that are hard on the stomach and I do better than most people with my disease.

OmaBird, the Som Thum (No.39 on the website menu) will blow your socks off! I like spicy but that is too much. I also think that green papaya in that salad is a waste of a good fruit. When it ripens it's heaven on earth. Thailand has the most amazing variety of fruit. Some of the dishes on the menus are Chinese or general SE Asian but hey who cares, no-one here does! Thai omelette is a favourite of mine. Its folded and stuffed with pork mince and other good things but no spice.

Gambling is illegal here and the police occasionally raid homes to catch known card players. But you should see the casinos just over the border in Cambodia! Thais go there by the bus load to lose all of their money in one night.

Gambling has helped support my poulty addiction. I spent over $10,000 on poultry from some of my winnings. My husband says I am very lucky.
