Eating fertilized eggs

Are fertilized eggs better to eat? Do they taste different? Are they more healthy? Ive heard they wont stay fresh as long as un-fertilized.

There is no difference in flavor or texture or health between fertile or infertile eggs. I personally haven't experienced any difference in freshness either. All those things are effected by feed, housing, and handling of the chickens.
