Fertilized eggs for eating?

I'm going to collect fertilized eggs, specifically quail eggs. I want to sell the fertilized eggs for hatching but I'd also like to eat some of them. If I collect the eggs the same day they hatch, then refrigerate them for a bit then open them, will there be any blood or embryo, or any signs of life?
 
Many of us have roosters, which means a lot of the eggs we gather daily are fertilized. Some of us store the eggs in the fridge but a lot of people do not. In the EU, practically nobody refrigerates. But the eggs are perfectly good to eat for several weeks.
