Yes, there is nothing you could do to change the color she lays to blue. A picture of her may help, she may not even be an EE or she may, both ways could work.

How are you sure this brown egg was from your easter egger? Do you only have one hen, or is she separated from other hens?

Easter daggers are mutts, and usually have green or blue layer in their background. Of course, that doesn't mean they won't lay brown, white or cream
